It’s a meal that grounds you, balances you, and supports your body’s natural rhythm. is Kitchari?

Kitchari is a warm, easily digestible dish traditionally made with mung beans, rice, and a blend of spices. It’s often used during Ayurvedic cleanses, seasonal transitions, or when the body needs a reset. Kitchari offers a balanced combination of nutrients that’s easy on the digestive system, helping the body process and eliminate toxins while replenishing essential nutrients. Its versatility means it can be customized to support any dosha—Vata, Pitta, or Kapha—making it an essential tool for achieving lasting health and balance.

• Detoxifying: The healing properties of mung beans and spices gently cleanse the body, helping to release built-up toxins.

Kitchari for Each Dosha

1. Kitchari for Vata (Air + Ether)

Vata types tend to have a light, quick metabolism but can experience dryness and digestive irregularities. For Vata, kitchari needs to be grounding, moist, and warming to soothe and stabilize the body.

Ingredients:

• 1 cup basmati rice

• 1/2 cup split yellow mung dal

• 1 tbsp ghee

• 1 tsp cumin seeds

• 1 tsp coriander seeds

• 1/2 tsp turmeric

• 1/2 tsp ginger powder

• 1 cinnamon stick

• 4-5 cardamom pods

• 4 cups water

• Salt to taste

• Fresh cilantro for garnish

Cook Time: 30 minutes

Benefits: Grounding, hydrating, and soothing for digestion.

2. Kitchari for Pitta (Fire + Water)

Pitta types are naturally fiery, which means they need a cooling, anti-inflammatory kitchari to help balance their heat. This version is focused on reducing acidity and inflammation, creating a calming meal.

Ingredients:

• 1 cup basmati rice

• 1/2 cup split yellow mung dal

• 1 tbsp ghee

• 1 tsp fennel seeds

• 1/2 tsp turmeric

• 1/2 tsp coriander powder

• 1/2 tsp cumin seeds

• 1/2 tsp cardamom powder

• 1/4 cup coconut milk (optional)

• 4 cups water

• Salt to taste

• Fresh mint leaves for garnish

Cook Time: 25-30 minutes

Benefits: Cooling, anti-inflammatory, and calming for digestion.

Kapha types often experience sluggish digestion and congestion, so their kitchari needs to be light, spicy, and invigorating to promote circulation and stimulate digestion.

• 1/2 cup split yellow mung dal

• 1 tbsp ghee

• 1 tsp ginger powder
